I have been having the best time in my kitchen lately, testing out different Christmas cookie mix ideas.
These little cookies are so delicious. They feel festive without being fussy, and the mix fits perfectly into a pint size mason jar.
These jars only make a small batch, but sometimes that is all you need. They’re great for gifting, stocking stuffers, or keeping on hand when you want something sweet without making a whole production out of it.
To bake them, all anyone needs to add is one egg, a half stick of softened butter, and a half teaspoon of vanilla. I tried mixing with a spoon. I tried mixing with a spatula. My hands won. It was so much easier to bring the dough together that way. And yes, my hands were clean. I lined a cookie sheet with parchment paper, scooped out little dough balls, and eight to ten minutes later the kitchen smelled amazing. We were supposed to let them cool, but you and I both know how that goes. Warm cookies never stood a chance.
I also had fun making the little tags that hang on the jars. I used my Cricut for those. A simple design, easy to read, and it makes the whole gift look like you put a bit of love and time into it, even though the actual assembly is quick.
I am enjoying making these jar mixes. They feel personal and simple, and they save people time during a busy season. Right now I’m working on a homemade vanilla coffee creamer mix. That one is trickier. I love the creamer more than I love the coffee, and since I do intermittent fasting, I only allow myself one cup with creamer a day. The rest of the time it is black coffee, which I tolerate but don’t exactly celebrate.
Once I perfect the creamer mix, I’ll share it. I want it to taste good, be easy to make, and store well in a jar just like the cookies.
